My Indian meal from North Market
Contributed by Brad Fuller
This past week in class, I had exams in my two hardest classes at the end of the week. What did that mean for me? Easy weekend! On Saturday, the honors program took a group of honors students to COSI in Columbus to see the Body Worlds and the Brain exhibit. The exhibit contains many “plastinated” bodies and body parts so we can understand the beauty of the human body and how everything works together. As someone going into the health field (athletic training/physical therapy), I thought the exhibit was fascinating and I hope to be able to learn as much about the body as possible.
After this we went to North Market in downtown Columbus for a cultural meal. As you may or may not know, I am a Vegan, so it is exciting to get to go to ethnic places in cities because there are usually many vegan options. In the market, there are several retailers and places to purchase prepared food. I chose to go to an Indian place in the market because Indian food is my favorite. It was probably the best meal I’ve had in a while, all courtesy of the honors program! Also being the foodie that I am, I then purchased (on my own) several locally grown items, including maple syrup and apples. It doesn’t get any better than local apples and maple syrup.

Jungle Jim's adventure

Award Winning bathrooms at Jungle Jim's
Contributed by Brad Fuller
What a crazy week it has been! Actually, it has been a crazy past four weeks. Like I keep saying, first semester of junior year is really really hard. But I’m learning a lot and I know it will prepare me well for physical therapy school.
This past weekend I hosted a hall activity where we went to Jungle Jim’s International Marketplace during the day (with a stop at chipotle) and I cooked an Indian meal for my residents afterwards. If you have never been to Jungle Jim's, I highly recommend it. They have any type of food you could imagine! I love to cook but I have never really cooked Indian food because it is difficult to find the spices and all the essential ingredients at Kroger in Wilmington. However, I took advantage of the Indian section at Jungle Jim’s and bought all kinds of spices to make different curries and dals. I decided to cook masoor dal with cinnamon rice and asparagus. It was delicious! And the leftovers are lasting all week. If you like spicy food at all, you would love Indian cuisine. I’m hoping to make a somewhat authentic Asian dish of some sort for my residents next month, any suggestions on what to make??

Me, working at Joe's
Contributed by: Brad Fuller
Friday night was my first night working by myself at Joe’s Java, a coffee shop within Sugartree Ministries, the local food pantry. They offer a full service coffee bar to help raise money to buy food for the ministry, and I am the new volunteer barista on Friday nights. It is a 10-minute walk from campus and will soon be open Monday-Saturday until 10 or 11pm. Joe’s is a great place to hang out, even if you aren’t into coffee. This past Friday there were around 15 students there and I hope to recruit more within the next few weeks. I only learned how to make specialty coffee drinks a couple weeks ago, but it is something that I already enjoy a lot. I like interacting with people (especially interesting people), and interesting people seem to flock to coffee shops of any kind. I was there hour hours Friday and it seemed to go very quickly. If you are a current student or faculty member, come get coffee from me next Friday! If you are a prospective student, come get coffee from me on Friday and I will tell you everything you need to know about Wilmington! It will be a great time. If you are into service and being somewhere with positive, giving spirit, Sugartree Ministries is the place to be. I’m sure I will talk much more about it in the future.

Burrito!
Contributed by: Brad Fuller
As you may or may not know, I am a community advisor in the College Commons apartments, which is very similar to a Resident Assistant (RA) in the residence halls. One of our job duties is to host programs for our residents as a way of community building and as a great way to get people involved. This past Sunday, I hosted a program at my apartment where I cooked burritos and made everything from scratch (except for the tortillas…). Cooking for people may be one of my favorite things to do, so I chose to do it for my program. Not as many of my residents showed up as I would have liked, but I’m hoping for a better turn out next time. I could probably also improve my advertising techniques, as this is difficult to do in an apartment-style living arrangement. Next month, I am planning on cooking a vegan dish that is a little more exotic than simple burritos (not to discredit burritos at all, since they are my favorite food), but my goal will be to get my residents to try some foods that they have never tried before.

first attempt at sushi
Contributed by: Brad Fuller
While many first year students at Wilmington College eat most meals at the TOP (Top of Pyle Center), I finally have the luxury as a junior of cooking meals in my apartment. The other night, my roommate and I decided to make sushi. I am a vegan (more on that at a later time ☺) and I love to cook, so my next kitchen goal is to become a master sushi chef. The first attempt turned out to be more like a burrito wrapped with seaweed instead of a tortilla, but it still tasted like sushi. I have a few ideas to improve on the next batch, and hopefully I can get good enough to make it for my residents (I am a community advisor in the College Commons apartments). I do plan on cooking other things as a community building activity, and I believe burritos will be first on the menu. Eating healthy whole foods is very important to me, and they can be very delicious as well. I am looking forward to sharing food with people that may not know me and people that do, as well as explaining to them a little more about my dietary choices.
